Fluffy Homemade Waffles

We L O V E waffles in this house. I try to always keep a full fridge and a full pantry, I like the comfort of being able to just throw something together. Since I've been using this recipe, I can't think of one time I didn't have everything on hand to whip them up. Either for the two of us, or the weekend we had five friends staying over unexpectedly. These waffles are outstanding!

When I was a kid I hated pancakes, but loved waffles ... Makes absolutely no sense, except that is totally my personality. To be particular about something for no reason. The hubs grew up with pancakes, which he still loves, but his mom is a pancake master. So I leave those to her, why mess with a good thing?

What makes these so fluffy and tasty are the egg whites. You beat them until you see small peaks, they also will have really grown in size. Check out the before and after picture below.

My momma says batters are best mixed with a wooden spoon, so after the egg whites are done, that is all you need. This batter is easy to half or double, I've done both with great success.

Recipe:

Serves 4

  • 2 Egg Whites (1/3 cup)

  • 2 C Flour

  • 1 3/4 C Milk

  • 1/2 C Vegetable oil

  • 1 tsp Vanilla

  • 1 Tblsp Truvia (or 2 Tblsp Sugar)

  • 1/4 tsp Salt

  • 4 tsp Baking Powder

  • Cooking spray

  • Waffle Iron

  • Large Bowl

Add egg whites to the mixer with the whisk attachment and turn it on high, this will take about 5 minutes. The timing is pretty great to warm up the waffle iron & combine the remaining ingredients for the batter. If you have a hand mixer that works, you will just have to fluff the egg whites as an added step and prepare the batter either before or after.

One of the best parts about waffles, is after the batter is complete I turn it over to The Hubs and he takes over. He put's aluminum foil over the counter, and then puts the waffle iron on top for easy clean up. I make the batter in a bowl with a spout, so he just pours in the desired amount of batter into our Belgian waffle maker.

We add bacon bits to our waffles, it's so yummy! I topped our waffles with runny eggs, butter and maple syrup. A mimosa on the side made this a perfect Sunday Brunch!
